Fin-to-scale dining (l,d; $$$)
Chefs worldwide rave about Josh Niland’s revolutionary fin-to-scale cooking. And it’s here, at his intimate, inner-city restaurant, that you can savour his ingenious approach to seafood.
While the casual lunch menu is delcious, Niland’s prowess shines brightest at dinner. Book ahead to sample superbly executed, out-of-the-box creations like sea-urchin crumpets, fish-eye crisps with oyster emulsion and a spicy ‘nduja paste (made of striped marlin), or charcoaled pipis (local clams) served in a native juniper and yellowfin stock.
Book well ahead and request a seat at the kitchen-counter bar.
