Thanks to its population of sheep and the salty herbs that the beasts spend their time munching, the island of Pag has become a cheese-producing centre of international renown.
Award-winning producer Gligora maintains a string of shops throughout Croatia, although it’s this store right beside the dairy in the village of Kolan that carries the freshest and best selection.
Made from sheep’s milk and rolled in ashes before being left to mature, classic Pag cheese is hard and piquant, rather like Parmesan or mature Cheddar. Local dairies also make milder versions, as well as goat’s cheese, and blended cheeses made from sheep a cows’ milk.
