Castilla Leon

The heartland of the old kingdom of Castile and the launching pad for the Reconquest against the Moors. the modern region of Castilla León still retains the hallmarks of a frontier territory. Castles and fortified towns are dotted across the plains, spectacular cathedrals dominate the cities of León, Salamanca, Burgos and Segovia while the local fiestas often celebrate the victories and past exploits of the Castilian knights.
This harsh but fertile land bisected by the Río Duero, is home to some of Spain's most iconic gastronomy. This is the plcae to come for Castilian roasts of lamb and suckling pig (Cochinillo) and for chorizo and morcilla.
Fruit and vegetables are also prized with white beans, lentils and red peppers featuring in many local specialities. Cheese made from cow, sheep and goat's milk are another source of pride, while the wines of the region and, in particular, from the Ribera del Duero and Rueda have a deserved reputation for their high quality.
