Lacón
Shoulder of pork

Cured ham from the front legs or shoulders of a young pig. The manufacturing process is similar to producing jamón but takes less time. The best lacón comes from Galicia and if it is labelled tradicional, the pigs are fed only on natural sources of food before slaughter.
In Galician restaurants lacón is often served up with cachelos (boiled potatoes) and grelos (rapini or turnip greens).
