Berenjena
Aubergines (eggplant)

A traditional element of Moorish cooking, berenjenas are used in numerous ways in modern Spanish cuisine.
They are used in the dish known as escalivada where they are combined with a multitude of other vegetables including peppers and onions. Berenjenas are also filled with meat, vegetable or ham, are often used in soups and are often battered and fried for a tapa.
Sprinkling with salt and then rinsing before cooking helps take away any bitterness from the taste.
