Pimientos are one of Spain’s favourite vegetables. They come in all colours, shapes and sizes, can be sweet or hot and served raw, roasted, fried, preserved or stuffed.
Pimiento morrón is large, has a sweet taste and a form skin - usually eaten in salads or roasted.
Cornicabra are smaller red peppers that were traditionally hung outside houses to dry.
Pimientos del piquillo are small, pyramid-shaped peppers that have a light taste and are traditionally preserved in jars or tins.
Pimientos verdes have a sweet taste with an intense aroma and a fine skin. They are often fried up to accompany meat dishes.
Pimientos del Padrón are small, green randomly hot peppers which are fried up with salt and eaten whole as a* tapa*.
