Queimada
Hot Galician punch

An alcoholic punch from Galicia that is served hot and made from orujo flavoured with herbs, coffee beans, cinnamon, lemon peel and sugar.
The preparation of a queimada, which is often done at the end of a big Galician meal or at local fiestas, is a carefully ritualised process.
Guests gather round the queimada which is carefully mixed and then set alight to the accompaniment of a conjuro (a spell or incantation) in order to ward off evil spirits while some of the alcohol is burnt off.
