Catalan-style crème brûlée

Similar to the French crème brûlée, though made with milk rather than cream, crema catalana or crema cremada dates back to the Middle Ages where it appears in Catalan recipe books.
Made from an egg yolk, sugar, flour and milk custard together with cinnamon and citrus zest it has a singed caramel crust and is best served up in an earthenware dish.
