Marinated anchovies

Fresh anchovies marinated in vinegar and olive oil. The vinegar whitens the flesh of the anchovies which are then seasoned with garlic and parsley.
Nowadays the anchovies are frozen before being marinated to prevent the survival of any Anisakis larvae and the resulting intestinal problems.
A favourite summer-time tapa served with a cold beer.
