Souk Ableuh is a small souk just off the Jemaa el Fna. It’s dedicated specifically to olives, and it’s the best place in Marrakesh to buy them.

Olives Roses and Chamomille

The most typical Moroccan olives are little wrinkly black ones, which have quite a strong flavour, and go well with bread. You'll also find several varieties of green olives, often with lemon or with herbs or spices.

Another good buy here are lemons pickled in brine. The small ones, usually sold in jars, are the most aromatic. They're a vital ingredient in that classic Moroccan dish, chicken tajine with olive and lemon. The stallholders will suggest which olives to use in that, but plump purple ones are usually the best.
