Aix-en-Provence Calissons

Calissons d'Aix

A speciality from Aix for lovers of confectionary, the Calisson probably had its origins in medieval Italy. Legend has it that they were introduced to Provence for the wedding of Good King René in 1454 although it has been pointed out that almonds were not widely available until 100 years later.

Calissons consist of a paste of candied citrus fruit and ground almonds covered with a layer of royal icing. The texture is similar to marzipan but with a fruity flavour and they are shaped like an almond. One thing is certain – they are absolutely delicious and a must buy souvenir of this splendid town to take home – if you can resist eating them while you are here of course!
