A play on the word “beetroot”, Peet Ruut takes emblematic north-European ingredients and use them as a basis for some exuberant contemporary cooking.
The humble beetroot features prominently in a menu that also takes in mushrooms, fishcakes, steaks, ribs, and a host of locally-sourced vegetables and herbs. he baked rhubarb dessert is a particular treat.
Portions are a bit on the nouvelle cuisine side but standards are high.
