Bringing the Zen of Seattle to the beauty of Southern Indiana, Rosalee and Dick Betz created Mary Rose Herb Farm, a holistic retreat, in the charmingly named Cattail Valley, tucked away just miles from the Ohio River.
Classes & yurts
The Zen of the herb farm comes not just with growing organic herbs as well as offering traditional Chinese medicine consultations and Biblical feng shui classes that the couple teach but also because overnight guests stay in yurts – a type of portable structure often covered in felt stretched over a wooden frame and traditionally used by the nomads of Central Asia.
It's safe to say that Mary Rose Herb Farm is most likely the only place offering yurt accommodations in this region of Southern Indiana.
Food
Overnight guests get to feast on foods made from the couple's extensive organic gardens and what's available from neighboring farms.
Also on the menu—dinner is provided for those staying here if they call ahead, breakfast is included in the cost of a stay—are super foods – those considered to be loaded with tons of nutritional and disease preventing components such as nuts, edamame, flaxseed, kale, kiwi, quinoa, yogurt, blueberries, avocados, lentils, and squash.
Meals are tailored to meet specific diet restrictions such as vegan and vegetarian. Their natural meats come from two local vendors, Fischer Meats and the Jerry Steckler family in nearby St. Henry, Indiana.
