Al Fassia
Marrakesh's finest Moroccan cuisine (l,d; $$$)
If you want to taste the finest classic Moroccan cuisine, Al Fassia is the place.
The food here is Fassi, meaning that it's in the style of Fez, Morocco's culinary capital. To start with, therefore, you can't do better than a pastilla, a sweet, cinnamon-spiced pigeon pie in filo pastry, which is Fez's most famous dish (160dh).
For main course, the menu at Al Fassia features several different tajines, and if you're after the most classic Fassi cooking, the ones to go for are lamb, for example with almonds and prunes, or with seasonal vegetables (150dh). They also do a very fine chicken tajine with olives and preserved lemons (150dh), plus a fish tajine, a veg tajine, and four different versions of couscous, one of which is vegetarian.
